butter

Filling:
1 c sweetened condensed milk (chilled)
4 egg yolks (chilled)
½ c key lime juice (chilled)
pinch lime zest

Directions:
Directions:
For the crust, melt appropriate amounts of butter and mix with ground-up graham crackers. Spread by hand into pie dish, refrigerate to set.

Using mixer, beat egg yolks and lime zest at high speed until light in color and fluffy, ~5 min. Gradually add condensed milk and continue to beat 3-4 min. Lower mixer speed and slowly add lime juice, mixing just until incorporated. Pour mixture into crust, bake ~10 min until filling sets. Cool then refrigerate.
