1 cup sugar
3/4 cup matzo cake meal
1/4 cup potato starch
3/4 cup oil
14.5 oz can carrots (save a bit of liquid)
1 teaspoon baking soda
1 teaspoon cinnamon
2 large eggs

Directions:
Directions:
Preheat to 350º.
Put sugar, cake meal, starch and oil in bowl and blend.
Add baking soda, cinnamon and eggs.
Mix at medium speed for 3 mins until smooth.
Pour into muffin paper lined miffin pan almost to top.
Bake 30 minutes until toothpick comes out clean.
