2 TB butter
1/4 cup cream of coconut
2 ripe red bananas or 2 firm large bananas, peeled & bias sliced 1/4 " thick
1+1/2 cup flour
1/2 cup sugar
3/4 tsp ground ginger
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp Allspice
1/2 cup buttermilk
1/4 cup softened butter
1/4 cup cream of coconut
1 egg
Coconut curls or flakes for garnish

Directions:
Directions:
Preheat oven to 350º.

Melt the 2 TB butter in a 9" round baking dish.
Stir in the first 1/4 cup cream of coconut. Arrange sliced bananas on the bottom of the dish & set aside.

In a medium bowl, stir together flour, sugar,ginger,baking soda & powder, & allspice.
Add buttermilk, the 1/4 cup butter & the remaining coconut cream. Beat with a mixer on low to medium speed about 30 seconds or until combined. Then beat the batter on high for 2 minutes.
After scraping the sides of the bowl, add eggs & beat another 2 minutes. Spoon batter into the pan without disturbing the layered bananas.

Bake for about 35 minutes or until inserted toothpick comes outclean. Loosen the sides & Cool the cake for 5 minutes on a rack then invert onto a serving plate.Garnish with coconut of desired
