Mom's Coconut Cake Recipe

3 cups flour
3 tsp baking powder
1/2 tsp salt
3/4 cup butter
4 eggs - yolks & whites separated
1+1/4 cup milk
1/2 tsp almond extract
1 fresh coconut

Fresh Coconut Sauce:
reserved coconut liquid - 1/3 to 1/2 cup
1/2 cup sugar
1 tsp lemon juice
1 tsp almond or vanilla extract

Sift together - flour, baking powder, & salt.

In a separate large bowl, mixture,cream butter then gradually add egg yolks, beating well between each.

In another bowl, combine milk & extracts

Alternately with DRY mixture, add to creamed mixture - begining & ending with dry ingredients. Beat well after each addition

Beat egg whites in a separate bowl, until stiff but not dry. Fold into the batter gently, until just mixed.

Turn into 2 - 9" cake pans that are well greased & lightly floured on the bottoms only.

Bake in a modest oven (375º) 30 - 35 minutes.

Meanwhile prepare a fresh coconut - reserving the liquid & shredding the meat.Cover & set aside.

Prepare the Coconut sauce by combining all ingredients & let simmer 20 minutes.

Cool cakes in their pans for 10 minutes, then turn out on racks with top side on top.Brush tops with sauce until all the sauce is absorbed.

Frost with white frosting, stacking layers with frosting & a little shredded coconut in between. Cover with as much shredded coconut as you can get to stick on.
