3 cups cooked chicken, chopped
8 oz. spaghetti noodles, uncooked
1 cup sharp cheddar cheese, grated
8 slices bacon, cooked and crumbled
½ yellow onion, diced
2 carrots, diced
2 stalks celery, diced
2 tablespoons olive oil
1 (32 oz.) package low-sodium chicken broth
1 (10.75 oz.) condensed cream of chicken soup
1 cup half-and-half
1 (1 oz.) package dry ranch seasoning mix
Kosher salt and freshly ground pepper, to taste

1. In a large dutch oven pot, combine the cooked chicken, cheese and cream of chicken **Modifications - instead a can of condensed cream of chicken soup, use 1/2 can cheddar cheese soup and 1/2 can cream of chicken, chicken broth, 1/2 and 1/2, chopped onions, carrots, celery, ranch seasoning mix and crumbled bacon.
2. Bring to a boil over medium heat, reduce heat and simmer until vegetables are soft and tender about 30-45 minutes.
3. Stir in dry egg noodles and cup of shredded cheddar cheese. Cook until noodles are soft.
I make the day ahead and when reheating add some chicken broth if needed.
