5 eggs
1 cup sugar
1 pound cream cheese
1 pint sour cream
10 to 12 graham crackers, rolled into crumbs
* 1 tsp lemon extract
* 1 tsp lemon extract

Directions:
Separate eggs.

In another bowl, beat the whites until stiff

In another bowl, beat the yolks with the sugar then gradually add cream cheese. When well mixed, add sour cream.Add flavorings

Fold in beaten whites

Butter or non stick spray a spring form pan & line with graham cracker crumbs

Bake one hour at 300º. Turn off oven but leave cake in oven for one hour more with heat off.

Cool & store in refrigerator.
