3/4 cup plus 2 tablespoon all-purpose flour
2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded extra-sharp cheddar cheese (4 ounce)
2 tablespoon cold vegetable shortening
6 tablespoons buttermilk

Preheat oven to 450º.

Into a medium bowl sift together flour, baking powder, baking soda, salt, and pepper. Using a pastry cutter or two knives, work in cheese and shortening until mixture resembles course meal.

Make a well in center of flour mixture and pour in buttermilk. With a fork, toss gently until mixture is just moistened. Do not overmix - the dough should be very sticky.

Turn dough out onto a floured surface and knead gently once or twice with floured hands, sprinkling dough lightly with flour to keep it from sticking. Pat the dough to 1/2" thick.

Dip a 1 1/2" biscuit butter into flour and cut out biscuits using a straight-in and straight-out motion (dip cutter into flour before cutting each biscuit). Gather and repat the scraps to make additional biscuits. Transfer biscuits to an ungreased baking sheet and bake for 12 to 15 minutes, or until golden brown.

Best served warm.

Makes 28 biscuits.
