1/2 lb. Baby Carrots
1 lg. Onion, peeled and sliced thin
4 lb. Corned Beef Brisket with spice packet, fat trimmed
4 c. Beef Broth
6 oz. Beer
6 Cloves Garlic, peeled and smashed, or 3 tsp. Minced Garlic
1-1/2 tsp. Allspice
1 Tbsp. Kosher Salt
3-4 Bay Leaves
1 Tbsp. Whole Peppercorns
7 Fingerning or Baby Red/Gold Potatoes, halved
1 Med. Head Cabbage, sliced and chopped into 1"x2-3" pieces

Directions:
Directions:
Place carrots and onion in large slow cooker and corned beef on top. Add broth, beer, garlic, allspice, salt, bay leaves, peppercorns and spice packet. Cover and cook on low for 10-hours.

Add potatoes and cabbage adding enough broth to have them submerged. Cook 2-hours more on low, or until beef and cabbage are tender.
