1 premade pie shell prebakeed
1 Tbsp butter
1/2 lb sliced baby bella mushrooms
3 c fresh spinach
1/2 c diced yellow onion
1/2 c milk
1/2 c heavy cream
2 large eggs
1 large egg yolk
1 c sharp cheddar cheese

Directions:
Directions:
Preheat oven to 375º. Melt butter in large skillet. Add onions and cook until translucent. Add mushrooms and cook, stirring often until mushrooms release their liquid and the liquid evaporates. The mushrooms should be a dark golden brown 8-10 minutes. Stir in spinach and cook for about a minute until spinach wilts. In a medium bowl, whisk together whisk together milk, cream, eggs and yolk. Season with salt and pepper to taste. Sprinkle half of cheese over crust. Sprinkle with vegetables and top with remaining cheese. Pour egg mixture over cheese. Bake until center is just set about 30-35 minutes.
