3 lbs yellow onions, peeled sliced and cut into quarters
2 Tbsp butter melted
2 Tbsp olive oil
2 tsp salt
freshly ground black pepper
10 c reduced sodium beef broth
2 Tbsp balsamic vinegar
3 Tbsp brandy
baquette bread
2 c gruyere cheese

Directions:
Directions:
Season the onions with salt and pepper. Place the onions in a large slow cooker. Stir in butter and oil. Cook on low for 12 hours or overnight until onions are dark golden brown and soft. Stir in the broth and vinegar. Cook on low for 6-8 hours. Taste and season with more salt and pepper if needed. Stir in brandy if using. Slice baguette into slices. Toast bread slices. Put soup in crocks, top with toasted bread and cheese. Place under broiler until cheese melts and is browned.
