3 tbsp butter
¾ to 1 cup brown sugar
7 slices pineapple (drained)
7 maraschino cherries (drained)
1½ cup Bisquick
½ cup sugar
1 egg
½ cup milk or water
2 tbsp shortening
1 tsp vanilla

Directions:
Preheat oven to 350º
Melt butter I n the bottom of a 9 inch cake pan – spread brown sugar around the bottom of the pan – place 1 slice of pineapple in center of cake pan and the other 6 around it – place a cherry in the center of each pineapple – beat together the Bisquick, sugar, egg, milk (water), shortening, and vanilla – pour evenly over pineapple – bake for 30 to 35 min – serve with whipped cream if desired
