2 1/2 lb boneless pork loin
1/4 c olive oil
salt and pepper

Mojo Spread
3 Tbsp Mayo
2 Tbsp Olive Oil
1 Tbsp Cilantro Leaves
1/2 tsp salt
3 cloves garlic minced
Juice of 1 lime

Sandwich
Cuban rolls
3 Tbsp whole grain mustard
4 oz ham thinly sliced
4 oz Swiss Cheese slices
dill pickle slices
2-3 Tbsp butter melted

Directions:
Directions:
For pork preheat oven to 400º. Drizzle oil over the pork and sprinkle liberally with salt and pepper. Transfer pork to rack over a heavy bottom roasting pan. Roast the pork until thermometer inserted into the thickest part of the meat reads 140º about 1 hour. Let pork rest for 10 minutes. Slice 1/4" thick. For the mojo spread add mayo, oil, cilantro, salt, garlic and lime juice to bowl. Stir until evenly combined and spreadable. For sandwich heat large cast iron skillet over medium heat. Spread the top half of each roll with 2 Tbsp mojo and 2 tsp mustard. Layer the pork, ham, cheese and pickles. Brush the skillet with butter, place 2 sandwiches in skillet and brush the top half with butter. Place another cast iron skillet on top of the sandwiches with a heavy can to press down or use panini press. Cook until bread becomes golden brown on one side then flip and repeat on the other side.
