1 batch flax egg
1-2 Tbsp olive oil
4 cloves garlic, minced
1/2 cup panko bread crumbs
1/4 cup fresh cilantro (finely chopped)
3 Tbsp vegan Parmesan cheese
1 Tbsp hemp seeds
1/2 tsp ground turmeric
1 1/2 tsp ground cumin
1 pinch sea salt and black pepper
1/2 lemon, juiced
1 15-ounce can chickpeas (drained & rinsed)

Directions:

Make the flax egg (1 tbsp flaxseed + 2 tbsp water)
Cook the garlic in some oil and add to the flax egg.
In the food processor mix: bread crumbs, cilantro, cheese, hemp seeds, turmeric & cumin. Mix until is well blend.
Add the flax egg mix with chickpeas, lemon juice, salt and pepper. Mix until moldable dough forms.
Make small balls and cook in a pan with some oil. Flip until all sides are gold.
