2 Tins chopped tomatoes
1 Tin black beans (drained and rinsed)
1 Tin kidney beans (drained and rinsed)
1 Tbsp Balsamic Vinegar
1 Tbsp sugar
1 Courgette (cubed)
2 Red onions (diced)
2 Cloves Garlic
pinch of salt and pepper


White Sauce:
2 Cups Non-dairy milk
3 Tbps Vegan Butter
2 Tbsp all-purpose flour
1/4 cup Nutritional yeast
1 Tsp Cumin (optional)
Salt and Pepper

Directions:
Start by chopping your red onion and garlic cloves. Place them on a medium heat with some oil (or if you prefer you could use some water). Once they start to brown, add your courgette. Cook for about 5 minutes so everything can soften. Add the tinned tomatoes, balsamic vinegar, and sugar. Add your kidney and black beans. Leave this on a low heat whilst you prepare the white sauce.

For the white sauce - start by heating up your butter in a deep pan. Once melted, add your flour and mix well until you have a paste-like substance. Very slowly and gradually adds your milk bit by bit. Use a whisk for this past and keep stirring as you add the milk. Once all combined, add your nutritional yeast and spices of choice, finish with some salt and pepper.

Preheat the oven to around 180 degrees (Fan).

Using a lasagne dish, put some of your chilli on the bottom. Top with some lasagne sheets, you may need to snap them in half to fill the gaps. Top with some white sauce. Continue to do this until you have about 3 layers. On the last layer use up all of the white sauce on top of the lasagne sheets. This is optional however I top with grated vegan cheese, breadcrumbs, seeds and some more ground black pepper.

This can then go in the oven for around 45 minutes Please note, appliances may vary,.
