½ cup diced celery
½ cup diced onion
1 Tbs olive oil
3½ cups peeled and diced potato’s (2 large russets)
1¼ cups cooked diced ham
5 cups gluten free chicken broth
½ teas salt
½ teas ground white pepper
3 Tbs sliced green onions
¼ cup shredded Cheddar cheese

Directions:
Directions:
In a large skillet, sauté celery and onion in olive oil until softened, about 3-4 min. Add to greased 4 quart slow cooker.
Add potatoes, ham, broth, salt, and pepper to the slow cooker. Cover and cook on high for 4 hours.
Ladle soup into bowls and garnish with green onions and Cheddar cheese.
