1 tablespoon butter
4 slices of Canadian bacon
8 eggs
1 ½ cups grated medium-sharp Cheddar cheese
2 teaspoons finely chopped parsley
⅛ teaspoon pepper

Directions:
Directions:
Preheat oven to 325°. Use butter to generously grease 4 shallow 1-cup ramekins or individual French gratin dishes. Line bottoms of dishes with Canadian bacon, butting to fit if necessary.

Carefully break 2 eggs, side by side, into each dish. Sprinkle cheese evenly over eggs and bake 12 to 15 minutes, until whites are just set and cheese is melted.

Sprinkle with parsley and pepper and serve at once.

Yield: 4 servings
