2 cups elbow macaroni
2½ TBSP butter, divided
1½ TBSP all purpose flour
1½ cups of 2% milk
¼ tsp salt
¼ tsp black pepper
1½ cup shredded low-fat cheddar cheese (6oz)
¼ cup dried unflavored breadcrumbs

Directions:
Directions:
Cook Macaroni according to package directions. Drain and set aside.

Melt 1 TBSP butter in a small skillet. Add breadcrumbs and cook until toasted, about 3 minutes. Set aside.

In a medium sauce pan, melt remaining butter. Add flour, cook over low heat stirring constantly for 1 minute. Gradually add the milk, stirring constantly. Continue to cook, stirring constantly until thickened. Stir in salt and pepper. Remove pan from heat. Add cheese, stir until melted.

Stir macaroni into cheese sauce. Spoon onto individual plates, then sprinkle with toasted bread crumbs and serve.
