(1) 20 oz. shredded, frozen potatoes
(1) 10 oz. can of Cream of Mushroom Soup
1 c. sour cream
2 c. shredded cheddar cheese (save 1/2 c. to sprinkle on top before baking)
3 Tbsp. butter
1 medium onion
2 tsp. garlic salt
1 c. chicken broth

Directions:
Directions:
1. Preheat oven to 350*.
2. Spray the inside of a 9X13 baking dish with non-stick cooking spray.
3. Chop the medium onion into 1/2” pieces. Add the onion to a skillet with the butter. Cook on medium heat, while stirring until the onion is light caramel. (About 5 minutes.)
4. In a large mixing bowl, add the shredded potatoes, cream of mushroom soup, sour cream, 1 1/2 c. cheese, the onions, garlic salt, and chicken broth. Stir until well mixed.
5. Spread the potato mixture in the prepared baking dish and sprinkle the remaining cheese on top.
6. Bake for 30-40 minutes or until the edges are bubbly and lightly golden brown. Remove from oven and enjoy!!!!
