3/4 c. unsweetened cocoa
2 c. sugar
2 c. all-purpose flour
1 tsp. baking soda
pinch fine salt
1 bottle Guinness (or other stout beer) room temperature
1 stick butter, melted
1 tbsp. vanilla
3 large eggs
3/4 c. sour cream

1. Preheat oven to 350ºF.
2. In a large mixing bowl, whisk together the cocoa, sugar, flour, baking soda and salt. (Sift together to remove clumps.)
3. In another mixing bowl, combine the Guinness, melted butter and vanilla. Beat in eggs, one at a time. Mix in sour cream until thoroughly combined and smooth. Gradually mix the dry ingredients into the wet mixture.
4. Lightly grease 24 muffin tins (plus 12 mini muffin tins) or use cupcake papers. Divide the batter into the muffin tins, filling each 3/4 full. Bake for about 12 minutes and then rotate the pans. Bake another 12 minutes or until risen, nicely domed, and set in middle but still soft and tender. Cool before turning out.
 

Boozy Frosting

4 c. powdered sugar (to desired consistency)
1/2 c. butter
8 oz. cream cheese
2 tbsp Peppermint Kahlua or Baileys Irish Cream

Boozy Cream Cheese Icing directions:
1. Cream the butter and icing sugar together until well mixed.
2. Add the cream cheese in cubes slowly until incorporated.
3. Add in booze. Continue mixing for 5 minutes until the icing is light and fluffy.
4. Dollop lashings on top of the cake to recreate the froth on the glass of Guinness.
