1 tbsp. avocado oil or oil of choice
Frozen or fresh chicken, cubed (amount varies depending on servings needed)
½ tsp. salt
¼ tsp. crushed red pepper flakes
1 tbsp. sesame oil
1 green bell pepper, sliced thin
1 red pepper, sliced thin
Chopped carrots
Chopped celery
Broccoli, chopped
2 tbsp. coconut aminos
2 tbsp. rice vinegar
1 tbsp. sesame seeds (optional)
Cashew nuts (optional)

Directions:

Toss the chicken in the salt and pepper flakes, then heat the avocado (or other oil choice) oil in a large skillet over medium/high heat. Add in the seasoned chicken and cook until chicken is cooked (5-7 minutes), then set aside.

Add in the sesame oil and all of the chopped veggies and cook for 5-7 minutes, or until the veggies are a little tender but still have bite to them. Then add in the rice vinegar and coconut aminos. Let cook another 5 minutes then stir in the chicken. Season with salt if needed.

Remove from heat. Top with sesame seeds and/or cashew nuts (both optional).

This recipe can be adjusted to your serving size. If serving a larger crowd, I just use 2 pans instead of one. Enjoy!
