Vanilla Creme Brulee Recipe

Ingredients: 6 Tbsp of raspberry, blueberry or blackberry jam. I used blueberry 2½ pt fresh ripe raspberries, blueberries or blackberries. (I omitted) 6 large egg yolks 6 Tbsp sugar 1 Vanilla bean lengthwise or 2 Tbsp vanilla - I used real one. 1½ cups whipping cream 12 tsp (Packed brown sugar) or 6 brown, 6 granulated - no lumps

Directions:1. Preheat oven 325º.
2. Butter 6 ramekins.
3. Spread 1 Tbsp of jam into the bottom of each or the custard cups or ramekins.
4. Place a small handful of berries (7-8) on their sides into the jam. Set aside. - I omitted
5. In a medium size bowl, whisk the yolks and the sugar until blended.
6. Now scrape in the seeds of the vanilla bean or add the vanilla.
7. Whisk in the whipping cream, and whisk until well blended.
8. Pour into the custard cups.
9. Arrange the custard cups into a 13x9x2 inch baking pan.
10. Fill the dish with enough water to come halfway up the sides of the custard cups creating a Bain-Marie.
11. Bake the custards until set in the middle, about 45 minutes.
12. Cool the custards and chill.
13. Heat the broiler and sprinkle 2 teaspoons brown sugar on top of each custard cup.
14. Place the custard cups onto a small baking sheet and broil on high just until the sugar starts to caramelize, rotating the baking sheet for even browning for about 2-2½ minutes.
