6 won ton wrappers cut into 1/2 inch strips
vegetable oil
2 oz. cellophane noodles
3 cups shredded cooked chicken
1 bunch scallions cut into 1 inch pieces
1/4 cup dry-roasted unsalted cashews
1 red bell pepper, cut into julienne strips

Dressing
1/2 tsp dry mustard dissolved in 1/2 tsp water
1 Tbsp. soy sauce
3 Tbsp. rice vinegar
2 Tbsp. hoisin sauce
1 tsp. ground allspice
1 tsp. sugar
2 Tbsp. sesame oil
1/4 cup corn oil

In a wok fry the won ton wrappers in vegetable oil turning them every 15 seconds. Transfer to paper towel to drain. Then fry the noodles for 5 seconds and transfer to paper towel. Crumble noodles.

In a large bowl combine won ton wrappers, noodles, chicken, scallions, cashews, coriander and red paper.

Make the dressing: In a bowl combine the mustard mixture, soy sauce, rick vinegar, hoisin sauce, allspice, sugar and S&P. Add the sesame oil and corn oil in a stream whisking until the dressing is emulsified.

Toss the salad with dressing and mound on lettuce.
