½ head cabbage, diced
1 bell pepper, diced (I use half red and half green for color)
1 cucumber, diced
1 medium onion, diced or ½ c diced scallions
1 pkg ramen noodles, crumbled
2 T toasted almond slivers
1 T toasted sesame seeds

Hint:
Crumble ramen noodles in pkg. I sometimes add green and/or red apple to add a
touch of tart/sweet.

Dressing:
6 T rice vinegar
⅔ C vegetable oil
1 t ground pepper
½ t salt
2 t sugar

Directions:
Directions:
Combine vegetables. Prepare dressing and pour over vegetables. Mix well and refrigerate.
Just before serving, add crumbled ramen noodles, almonds and sesame seeds. Toss.

This recipe was from a fellow mom, Kelly Ruotolo, when Jianell, my older daughter, went to Alpha-Bet Pre-school Co-op in Manassas, VA. Moms were scheduled to come in once or twice a month as the teacher helper. This helped to cut down on cost. We had a pot-luck lunch one day, and loved this salad that was shared.
