4 - 6 skinless, boneless chicken breast halves
2 eggs
2 Tbsp water
1 cup Italian bread crumbs, or more as needed
½ cup grated Parmesan cheese
1 cup olive oil for frying

1 (4 cup) bag shredded mozzarella
1 jar spaghetti sauce (We love Prego Traditional)

1. Rinse Chicken and pat dry. Set up a large bowl with 2 eggs beaten plus 2 Tbsp water, and a plate with bread crumbs and parmesan cheese mixed together.

2. Heat 1 cup oil in a large skillet on medium-high heat until it begins to simmer. Dip chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each chicken breast.

3. Cook chicken in oil until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.

4. Heat over to 350º.

5. Put chicken in baking dish. Top with spaghetti sauce (approximately 1Tbs - (I eyeball it), and then top with shredded mozzarella cheese.

6. Bake in oven uncovered for 30 minutes.
