5-6 small sweet potatoes
1/2 c. white sugar + more for sprinkling
1 Tbsp. cinnamon + more for sprinkling
1/2 Tbsp. cayenne pepper (optional)
1 c. packed brown sugar
3 Tbsp. honey
1/2 c. evaporated milk
1/4 c. butter
2 Tbsp. olive oil

1. Preheat oven to 375*. Wash and skin the sweet potatoes with a peeler then cut into thin even sized strips with a sharp knife.
2. Using a large bowl, toss the sweet potato strips in the olive oil until completely coated. Sprinkle on sugar, cinnamon, and optional cayenne pepper.
3. Arrange the sweet potatoes on a greased baking sheet in a single layer. Bake for 15 minutes, flip, then bake for an additional 15 minutes, or until potatoes are browning and crispy.
4. After flipping the fries, start the caramel sauce by melting the butter along with the brown sugar in a sauce pan over medium low heat. Add in the honey and stir constantly to prevent burning. Slowly add the evaporated milk, and stir until the sauce is thick and smooth. Let rest on the stove on the lowest (or ‘warm’) setting until fries are ready, stirring occasionally.
5. Remove the sweet potato fries from the oven and serve right away alongside the caramel sauce.

Of course everybody knows I do NOT-put the cayenne pepper on my fries.... but that does not mean the rest of you can’t enjoy the spicy HOT sweet potato fries. They are yummy without it.... the caramel sauce is wonderful!!!!
