1 1/2 c granulated sugar
1/4 tsp. cream of tarter
4 egg whites
4 egg yolks
3 tbsp. lemon juice
1 tbsp. lemon rind
1/4 tsp. salt
1/2 c. heavy cream for topping
1 pint of heavy cream
3 tbsp. shredded coconut

Make day ahead. Pre heat oven 275ºF Sift 1 c. sugar with cream of tarter. Separate eggs and beat white until sfiff but not dry. Add remaining sugar, continue beathing . When meringue makes spread over bottom and sides of well greased 9' pie plate. Bottom 1/4' thick, 1' on sides. Sprinkle rim with coconut. Bake 1 hour until litght brown. Cool. Beat yolks slightly in top of double boiler. Stir in 1/2 c. sugar, juice and rind and salt. Cook unti thick. 8-10 min cool mixture add whipped cream fold in. Pour cooled mix in crust. Chill 24 hours Decorate with toasted coco.
