2/3 cup oil
1 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons flour
1 1/2 cup evaporated milk
2 tomatoes
2 pounds Velveeta cheese
1/2 cup grated cheddar cheese
1/2 Cup grated Jack cheese
1/3 cup finely minced jalapeños

Directions:

Heat the oil in a heavy saucepan. Add the onions and garlic. Cook until soft but not brown. Stir in flour, mixing well.
Gradually add the milk and cook until mixture thicken. Add the remaining ingredients and cook over very low heat till all the cheeses have melted and mixture is thick and smooth. Serve warm with tortilla chips, bread cubes or sausage balls.

Shape sausage. Bake in 375º oven. Drain on paper towels and serve warm. You may make ahead, and zap in the microwave before serving.
