3 lb. Peaches (about 8 medium)
1/2 cup granulated sugar
1/4 cup brown sugar
2 Tbsp. All purpose flour
I Tbsp. Fresh lemon juice

Topping:
1-1/2 cups. all purpose flour
1/4 cup plus 2 Tbsp. Sugar
2 tsp. Baking powder
1/4 tsp. Baking soda
1-1/2 tsp. Ground ginger
3/4 tsp. Cinnamon
1/2 tsp. Salt
1/3 cup vegetable shortening
1/3 cup milk
I large egg
2 Tbsp. Molasses

Accompaniment: Vanilla Ice Cream

Preheat oven to 400 degrees.

Peel peaches and cut into 3/4 inch wedges. In a 3 quart saucepan bring peaches, sugars. flour and lemon juice to a simmer, stirring occasionally- and simmer 15 minutes.

Make topping: Into a bowl sift together flour, sugar, baking powder, baking soda, spices and salt. With a pastry blender, blend in shortening until mixture resembles sand.

In a cup with a for, beat together egg and molasses until combined well and stir into flour mixture until just combined.

Pour peach mixture into a shallow 2 quart baking dish and immediately spoon topping evenly over hot peach mixture.

Bake cobbler in middle of oven minutes or until peach mixture is bubbling and topping is cooked through.
