2 cups flour
2 tsp. baking powder
1-1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups sugar
4 eggs
1-1/2 cups Wesson oil
2 cups grated carrots
1 8-1/2 oz. can crushed pineapple (with juice)
1/2 cup chopped pecans or walnuts

Frosting
2 cups confectioner's sugar
1/2 stick butter
4 oz. cream cheese
1/2 tsp. vanilla

Cake:
Sift dry ingredients except sugar. Mix sugar, oil and eggs. Beat after each addition.

Add dry ingredients to mixture. Mix well.

Add carrots, pineapple and nuts.

Bake at 3500 for 55 minutes (or 3250 if using a glass pan) in a 13"x9" pan.

Frosting:
Cream all ingredients together and frost cake.
