2 tbsp butter
2 tbsp flour
2 cups cream (scalded)
¼ cup natural Swiss cheese grated
¼ cup Parmesan cheese grated
½ cup butter
Salt
Cayenne pepper
2 cups crab meat

Directions:
Preheat broiler
Make a white sauce of first 3 ingredients (butter, flour, and scalded cream) in a saucepan over low heat – add cheese, stir until melted – add remaining butter beating hard – season with salt and cayenne – arrange crab meat in a shallow butter casserole – pour sauce over crab meat – place in a moderately hot broiler for 8 to 10 minutes until golden brown
