3 eggs
2 cups sugar
2 tsp vanilla
1 tsp soda
1 tsp salt
1/2 cup nuts
1 cup oil
2 cups shredded zucchini
3 cups flour
1/4 tsp baking powder
3 tsp cinnamon
1 8 oz can crushed pineapple, drained (optional)

Directions:
Directions:
Beat eggs until foamy. Add oil, sugar, zucchini, and vanilla. Mix lightly. Mix flour, soda, baking powder, salt and cinnamon together in separate bowl. Add these dry ingredients to first mixture and blend. Add nuts and/or pineapple. Bake in 2 greased 9 x 5 inch loaf pans. Bake at 350º for 1 hour.
