3/4 cup sugar
1\2 cup margarine
3 eggs
zest from 1 lemon
1/4 cup rice flour
1 1/4 cups flour
1 heaping tsp of baking powder

Directions:
Directions:
Preheat the oven to 350º
Cut 8 strips to parchment paper to fit straight up muffin tin. Beat sugar and margarine to be smooth and creamy. Add eggs, one at a time. Then add dry ingredients. Stir well. Bake about 30 minutes, about 10 minutes before the end of baking, sprinkle cakes with sugar.
