1 liter full fat milk
1 1/2 cups white sugar
1 1/4 cups of rice
10 egg yolks
1/2 cup butter
1 tsp. vanilla
1 cinnamon stick
1 lemon peel grated
ground cinnamon

Directions:
Directions:
Put a pan to boil with 1.5 liters water. When it is boiling add the rice and the salt. Allow to boil for about 15 minutes. Drain rice. In another saucepan boil the milk with the lemon peel, cinnamon stick and vanilla. Once boiled add the milk to the drained rice. Stir and place on the heat again to finish cooking. Then add sugar, mix until it has dissolved and remove from the heat. Lightly beat the egg yolks and strain through a fine strained. Add the butter. Mix this mixture to the rice stirring continuously. Cook over low heat, stirring continuously until the yolks are cooked. Remove from the heat, place on small plates or on one big serving plate, then decorate with ground cinnamon.
Cool completely before serving.

Vermicelli can be replaced for rice. Only replace water instead of milk.This delicious dish always showed up a most Portuguese celebrations in our family enjoyed by young and old.
