6 chicken breast halves, boned, skinned and cut into 3/4 " cubes
1 cup coarsely chopped onion
1 garlic clove minced
1/4 cup peanut butter
1-1/2 tsp. ground coriander
1 tsp. ground cumin 1-1/2 Tbsp. lemon juice
2 Tbsp. peanut oil
1 Tbsp. brown sugar
3 Tbsp. soy sauce

Directions:

Put the chicken cubes in a flat-type baking dish.

In a food processor, add all the other ingredients and blend thoroughly. Add to the chicken cubes. Stir chicken cubes. Marinate for one hour or overnight in the refrigerator.

Thread chicken cubes onto the skewers. Grill the skewers of meat over a charcoal fire or under a broiler four or five inches from flame about 7-10 minutes.
