1 C. Flour
1/2 t. cinnamon
1/2 t. salt
2 t. baking powder
2 t. lemon juice fresh
3-4 cups apples (3 apples)peeled and chopped small i think 3 cups is plenty
2 T. sugar
2 large eggs
1/4 c. whole milk
vegetable oil for frying

glaze:
1 1/4 c powder sugar
1/4 t. vanililla exxtract
3-4 t. water

Directions:
Directions:
whisk together flour, baking powder, cinn, and salt in bowl.
In another bowl, combine the lemon juice and apples.
In the bowl of a stand mixer with a paddle attachment, mix together the sugar and eggs on med speed until fluffy combined, add milk. reduce speed to low and add the flour mixture in and mix until combined.

Add milk and continue to stir until all incorporated then fold in the apples.
Fill a frying pan halfway with oil. Heat over medium heat until the oil reaches 375 with a candy thermometer.

Add batter into the oil 1/4 cup at a time and let fry until golden brown. Flip and fry other side until golden brown. Test if they are done by inserting a small knife in the center and if it comes out clean its done.

Transfer to a paper towel lined cooling rack and let cool.

glaze: in a small bowl combine sugar, vanilla and 3 t. water. add more water, 1 t. at a time, until pourable consistency is reached. drizzle glaze over the warm fritters and let dry.
