1/4 # Sliced bacon, cut into 1/2" pieces
4 eggs
1 1/2 c milk
1/4 tsp pepper
1/2 # ham
2 c Smoked mozzarella or 1/2 cheddar
1 c monterey jack
8 slices white bread, trimmed of crust & cubed
1/4 c green onion
2 T butter

In a skillet over medium heat, fry bacon until crisp. Remove with slotted spoon and drain on paper towels. Reserve 3 T drippings. Brush 1 1/2 quart souffle' dish with reserved drippings and set aside. Preheat oven 350º. Whisk together eggs, milk and pepper. Toss bacon with ham. Toss cheeses together. Layer souffle' dish with 1/3 cubed bread, 1/2 of bacon and ham, 1/2 of the green onions and 1/3 of the cheese. Pour about 1/2 of the egg-milk mixture over layer. Drizzle with some of the bacon fat. Repeat layers using half the remaining bread, rest of the meats, half of the remaining cheese, rest of onions and some drippings. Top with remaining bread cubes and cheese. Pour the rest of egg/milk mixture over top. Drizzle with remaining drippings and dot with butter. Place dish in large pan and add 1 - 1 1/2" boiling water to pan. Bake in preheated oven until top is golden brown, about an hour for 1 1/2 qt dish. Double ingredients for larger crowd.
