1 cup graham crackers, crushed (I prefer animal crackers)
1/4 cup butter, melted

Mix the graham crackers (animal crackers) and butter together. Pat into an 8 or 9 inch springform pan.
 

Cake

1 pound cream cheese
3/4 cup sugar
2 eggs, beaten
1 teaspoon vanilla
Topping
16 ounces sour cream
1/4 cup sugar
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 375º.
Cream the cream cheese until fluffy in an electric mixer. Add sugar gradually, then eggs and vanilla. Beat thoroughly and pour over the crumb crust. Bake for 20 minutes or until just set. Turn the oven off, leave door ajar and let cake stand in oven for 20 minutes. Remove from oven.
Set oven to 475º. Stir together the sour cream 1/4 cup sugar and 1 teaspoon vanilla. Pour over the cake layer. Smooth top and bake for 7 minutes.
Cool on rack, then refrigerate for several hours.

Optional baking method:
Wrap an 8 or 9 ing springform pan with foil (so water will not get into the pan). Prepare a water bath large enough for the springform to fit comfortably into.
When ready to bake, put the pan into the prepared water bath and bake for 20 minutes or until just set.
