1 # ground pork
1 T minced fresh pork fat or lard
1 slice homemade-type white bread,
crumbled, soaked in 1/3 c milk and
squeezed dry
1 T fresh parsley
1/8 tsp dried thyme
1/8 tsp dried marjoram
1/8 tsp dried sage
1 T oil
1/8 tsp coriander
1/8 tsp ground pepper
1/4 tsp salt
1/4 tsp sugar

Directions:
Directions:
In bowl, combine pork, fat, bread, parsley, thyme,, marjoram, sage, salt, pepper, sugar and coriander; divide into 4 balls. Flatten into patties about 1/2" thick. In a skillet, fry the patties in oil, over moderate heat for 3 minutes on each side until golden brown, and no longer pink within. Drain on paper towels. Garnish patties with parsley sprigs.
