1 cup grated, de-seeded, and peeled cucumber
1 cup plain low-fat yogurt
1 tsp dried dill
½ tsp lemon juice

Directions:

Place cucumber on several layers of paper towels, cover with additional paper towels to dry. Let stand for 15 minutes. Combine cucumber and remaining ingredients in a bowl; cover and chill.
