For Strawberries and Whipped Cream:
3 1/2 c. quartered Strawberries
1/4 c.+ 2 Tbsp Granulated Sugar
1 tsp Vanilla Extract
1 c. Heavy Cream

For Biscuits:
1 1/2 c. All-Purpose Flour
1/8 c. Granulated Sugar
1 Tbsp Baking Powder
1/2 tsp Salt
6 Tbsp Butter (Unsalted)
1/2 c. Butter Milk (Add 1 tsp to 1/2 c. Milk if you don't have buttermilk)
2 Tbsp Buttermilk
Sugar (Coarse preferrably, for sprinkling)

For Strawberries:
1. Quarter and rinse strawberries, and mix with 1/4 c. sugar.
2. Cover and set in refrigerator until ready to use.

Make Biscuits:
1. Preheat oven to 425º F
2. Mix all dry ingredients in large bowl.
3. Using hands or food processor, mix cubed COLD butter until coarse crumbs are formed.
4. Pour buttermilk on top of everything, and mix until just combined (DO NOT OVERMIX!- dough should still be somewhat crumbly).
5. Pour out dough on to floured surface and pat together, and down until 1/4-1/2 in. tall.
6. Cut out to preferred size, and place on baking sheet lined with parchment.
7. Brush tops with heavy cream, and sprinkle with sugar.
8. Bake for 15 minutes, until golden brown on top.
9. Remove from oven, and allow to cool before assembling.

For Whipped Cream:
1. Set up hand or stand mixer.
2. Combine heavy cream, 2 Tbsp sugar, and vanilla into bowl.
3. Whip for about 3-5 min. until soft peaks form.

To Assemble:
1. Cut biscuits in half lengthwise.
2. On bottom half, add strawberries, and a spoonful of whipped cream.
3. Put top half of biscuit on top, and repeat.
4. Enjoy!!
