4 c Flour
3 c Sugar
2 tsp Baking Soda
1½ tsp Salt
1 tsp Baking Powder
1 tsp Ground Cinnamon
1 tsp Ground Nutmeg
½ tsp Ground Allspice
½ tsp Ground Cloves
¼ tsp Ground Ginger
4 Large Eggs
1 c Vegetable Oil
1 (15oz) can Pumpkin
⅔ c Hot Water
1 c Chopped Pecans

Directions:

Preheat oven to 350ºF.

Beat first 14 ingredients at medium speed with electric mixer just until dry ingredients are moistened. Fold in pecans. Spoon evenly into two (2) greased and floured 9x5 inch loaf pans.

Bake for 1 hour or until wooden pick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes. Remove from pans and cool completely on wire racks.
