8 T. butter
1 cup chopped onion
1 cup flour
2 cups shredded cheese or 1 1/2 cups Cheese Whiz
3 tsp. salt
1 1/2 tsp. pepper
12 cups milk
1 can cream of celery or mushroom soup

Directions:
Directions:
Saute onions in butter and then add flour. Slowly stir in milk then add rest of ingredients This is enough sauce for 24 cups of peeled, sliced potatoes. Bake at 350º for 1 hour then turn back to 250º for several hours until soft. Will thicken a little when removed from heat.

*cube cooked ham can be added to potatoes
