Pineapple Yogurt Waffles Recipe

2 cups fresh pineapple
2 eggs
1 ¾ cup milk
½ cup high protein plain yogurt
1 tablespoon honey
½ teaspoon salt
5 teaspoons baking powder
2 cups flour

Directions:
Directions:
Chop and lightly sweeten pineapple. Set aside. Using an immersion blender, mix eggs, milk, yogurt, and honey. Mix well. Add in salt and baking powder. Mix well. Remove blender and whisk in flour. Mix until just blended. There may still be some small lumps. Spray the waffle maker with no stick cooking spray. Preheat the waffle maker. When it is ready, spoon half a ladle of batter onto the waffle iron. Top with ⅓ cup pineapple. Top with other half ladle of batter and cook until done. Serve immediately with butter and syrup.
