1-1/4 lb. sea scallops
1 tsp. turmeric
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. paprika
1 tsp. flour
1 tsp. salt
1/8 tsp. cayenne
Olive oil for sauteing

Directions:
Directions:
Wipe down scallops with damp paper towel, then dry.

Place a 10-12 inch iron skillet over high heat for 2 minutes.
Dip each scallop in the seasoning mixture on two sides. Add. 1-1/2 Tbsp. of olive oil. Turn the heat to medium. Place half the scallops in skillet and saute for a total of 2-1/2 minutes, turning once after 1-1/4 minutes or until brown and crusty.
Repeat with other half of scallops, adding more oil if needed.
