1 lb chicken sausage
1/2 lb chicken thighs or breasts
3 large carrots, peeled and chopped
2 celery stalks, chopped
1 sweet onion, chopped
2 cloves garlic, chopped
2 can cannellini beans
1 can light kidney beans
1 cup low sodium chicken broth
1 bag baby spinach
1 bunch of fresh italian parsley
2 tbsp ghee, divided - I used olive oil
1 tbsp salt
1 tsp pepper
I also put in either diced sweet potatoes or butternut squash.
Heat pan and add 1 tbsp ghee. Add chicken and brown 3 minutes each side. Set aside.
Add chicken sausage, cook and break up or just brown the outsides. Set aside.
Add remainder of ghee and add carrots, celery, onion and garlic - cooking until onion is translucent or 5-6 minutes.
Add cannellini beans, add meat back to pan, add broth, spinach, salt, pepper, parsley and stir.
Let cook on med/low 4-5 hours.
You could cook this on the stove too!
