2 Tb olive oil
2 c riced cauliflower
2 carrots, diced
1 red bell pepper, diced
3 c cooked brown rice
1 c frozen peas
2 Tbs reduced-sodium soy sauce
2 tsp toasted sesame oil
1 tsp garlic powder
1 1/2 c diced fresh pineapple
2/3 c roasted, salted cashews, roughly chopped
4 green onions, thinly sliced

1. Heat olive oil in medium in a nonstick skillet. Add first three ingredients. Cook until tender, 8-10 min. Add next six ingredients and cook until heated through, 3-5 min.
2. Remove from heat. Add pineapple and cashews. Stir to combine and top with green onions.
