Brown Rice with Pine Nuts and Green Onions Recipe

c butter
4 c chicken stock
2 c long grain rice
c pine nuts or sunflower seeds
2 bunches green onion chopped
1 c minced parsley
Salt and Pepper

Directions:
Directions:
Melt c butter in a saucepan
Add rice and stir until browned
Mix in stock, cover and boil - simmer until all liquid is absorbed 20 - 25 min
Melt remaining c butter in a pan, add nuts and stir until golden, about 4min
Add green onion and parsley
Mix into rice. Season with salt and pepper
