2 chicken breasts diced
1 pound potatoes diced into 1 " cubes
3 carrots sliced
1 onion slivered
ginger slivered (about1/2")
curry powder
tumeric
salt
water

Directions:
Directions:
Dice chicken ahead of time; Add lightly baking soda and salt, pepper and garlic powder; Allow to rest for a few hours prior to cooking.

Mix curry powder and about 1/4 cup hot water to dissolve. Add oil to pot and when hot add curry/water mixture. Add diced chicken and cook lightly. Add potatoes, onions, carrots. Add enough water to barely cover. When boiling, add 1/2tsp turmeric or more to taste; Add salt. Add ginger and allow to simmer for 20-30 minutes until cooked.

If sauce is too thin add a touch of blending flour to thicken.

Serve with rice or roti - Trinidadian style.

I loved making and eating Curried Chicken with Dad. The kitchen would smell so fragrant of the curry and it was delightful. If we were lucky to have Roti, we would wrap the curried chicken and potatoes in the roti and eat it Trinidadian style.
