3 lbs venison roast
1Tbsp baking soda
3 Tbsp salt
2 Tbsp oil
2 bay leaves
1 large onion
1 clove garlic, sliced thin
Worcestershire sauce
salt and pepper to taste

Directions:
Directions:
Soak meat overnight in brine made with baking soda and salt. Pat dry, brown roast in hot oil. Put in roaster pan, add bay leaves, onions quartered, salt and pepper to taste, garlic on top. Baste with Worcestershire sauce, as needed. Bake at 300º for 2 hours, covered. A 5 lb roast takes 3 hours to cook, a 10 lb roast takes 5 hours.
