4 Sticks Cream Cheese
1/2 Cup Honey (can substitute Maple Syrup)
1/2 Cup Sugar
4 Whole Eggs
1 Egg Yolk
1 Cup Fig Puree
2 Sleeves Graham Crackers
1 Stick Butter

Directions:
Directions:
Set oven to 325 degrees.
In food processor chop graham crackers till they are fine. Add melted butter and blend till combined. Press into bottom and up sides of 8 inch spring form pan. set in freezer till batter is ready.
In mixer cream the cream cheese till smooth. Add sugar and honey. Add eggs one at a time. mix till combined. Add fig puree. Scrape bowl occasionally and continue mixing on low till smooth and completely combined.
Pour into prepared crust. Place pan in water bath and cook for 1 hour - 1 hour 20 minutes till cake still jiggles slightly in the middle. Remove from oven and let cool to room temperature on counter. Refrigerate till ready to serve (at least 4 hours)
